Meet Amy

I have struggled with the answer when asked, "What do you do?" and it isn't work-related. Ultimately, we settled on that I find things and untangle things. But I also read (a lot), pretend to wake surf, and watch Hallmark films.

The Weekend Away
it was amazing
So so good! Orla and Kate are long-time best friends off on a girls' weekend away. Kate is a bit of a player who is trying to get back at her soon-to-be-ex, causing her to spend frivolously and do drugs and hook-ups. Orla is a new mom ex...

Maybe Next Time
really liked it
Parts were a screaming 5 and parts were like “what?” And just irritated me. It is a Groundhog Day premise about a family of four - the mom is caught up in her own life and missing all that is going on around her with her kids and then he...

Ahhhh, a Puppy- Wordful Wednesday

“Ahhh, a puppy” has turned into “Ah-Choo, a puppy!”

Oh we are so excited about our sweet little puppy, but we are also having some struggles.

Poor Scott is terribly allergic.  One of the reasons I picked a Schnauzer is because they do not shed and are considered pretty allergen free.  Scott, our nephew and my cousin (oh and I) will all argue that Schnauzer puppies are NOT allergen free.  We’ve seen our fair share of hives, itchy and red eyes, asthma attacks and stuffy noses.  I’m just really hopeful that  the allergies will go away with his puppy fur because Jade is absolutely smitten.

I’ve also learned a couple of reasons why I like girl puppies better.  Girls do not hump the stuffed animals nor do girls have the “little red thing that comes out of his tummy” that Jade is finding very upsetting.

Another challenge we are facing right now is that he has started biting quite a lot and has Ivy completely scared of him.  She’ll only hold him when he is asleep.  Otherwise she’s way too freaked out.

The potty training is WAY easier with kids than with dogs.  That is all I will say about that.

On the bright side, he is ADORABLE and everyone that has met him thinks he is the sweetest, most cuddly, and prettiest little Schnauzer pup ever.  I will completely agree.  He’ll snuggle into you, he loves to get his tummy rubbed, he’s learned how to do the stairs up and down and he prefers to sleep with someone rubbing his head, tummy or ears.  Oh, and he’s sleeping from 10:30 until 6:30!!!  That part is better than either of the girls did.  Oh and better than Ivy still does.  (I know, I know – she’s 4.  You’d think she’d be able to sleep through the night).

I’m glad the girls are having so much fun with him, and I’m tickled when Scott enjoys a moment of him here and there.  Let’s just keep our fingers crossed that the allergies will go away soon.

I Heart Faces- Dessert Recipes

A Family Easter Tradition is my grandmother’s Pina Colada Cake.  It is moist and delicious and very very easy to make.  I didn’t take pictures of the process, but here’s the recipe…

Grandma’s Pina Colada Cake

Use yellow cake mix.  Follow instructions and add ½ c shredded coconut.  Bake per package instructions, but use a metal 9×13 pan (cupcakes are really messy and I won’t make them this way again).

When still hot from oven poke holes all over top of cake with fork.  Then while still hot, pour one 16 oz can of Lopez Pina Colada mix (shake well) over cake.  If puddles in corners, spoon over cake top.  Let cool.  Slather on cool whip and sprinkle coconut over cake top.  Refrigerate to keep.

You could also use real whipped cream.  Sometimes we’ll color the coconut green and top with jelly beans.  Which definitely makes it look much more Easter-y.

Happy Easter

Chris is Risen- In Truth, He is Risen.

Today is a day when we get to remember and be reminded of the atoning sacrifice our Savior, Jesus Christ, made for us.

Today is a day when we focus on Christ leaving a tomb void of his mortal body.

Today is a day when we get to consider the emotions of His disciples as they could not find their Lord.

Today is a day when we get to be mindful of the joy that His followers feel because they too shall rise again.

Today is a day when we we are blessed with the promise that we all will overcome death.

Today is a day to know that Christ is Risen and He is our Eternal Savior.

Christ is Risen – In truth, He is Risen.

Cake, Cupcakes and Contests

The ladies at Mayhem and Moxie are doing quite the birthday giveaway.  One of the ways to enter is to share your own story.  Here’s mine…

Cake decorating is something that I have always enjoyed but never really embraced.  Below are the two best cakes that I have done and the two I’m the most proud of.

The first one was all about fun to create.  It was my daughter’s 2nd birthday party and she just wanted a princess party.  It was the best party I have thrown.  It was a lot of work but totally worth it.  I wish I had more time now to put as much effort in to parties as I did when I worked from home.

The cake design came from Family Fun – I wish I could take the credit for it.  As you can tell, I’m not real handy with the can of frosting.   I’m not a perfectionist.

For the party I made invitations, again from Family Fun, that were princess shoes covered with glitter.  During the party we decorated crowns with jewels and glitter.  I loved that there wasn’t an adult complaining about gluing and decorating their crowns.  Every one of the adults even posed for a picture with their crown on.  The cake was just a box cake (I’m not much at the baking from scratch – although I wish I were) but everyone liked it.

After the party, I sent thank you cards that had a picture of her with her cake in her princess dress.  The cards were shaped like a princess cone hat.  I have to say, I can’t take credit for the crowns or the thank you cards either. Oriental Trading is awesome for crafts and party favors – especially on a budget.

The cake wreck story is all tied to the picture below.  Ivy wanted a Teddy Bear party.  I purchased one of those really great “Build-a-Bear” pans that Williams-Sonoma used to carry.  It was one of those kinds that took two halves and then you glue them together with frosting.  There was even a princess fondant kit that I bought to go with it.  I made the cake and followed the directions perfectly.  I was so excited about it.  As I took it out of the oven, the pan slipped out of my hand.  It crashed to the ground and crumbled into a million little pieces.

I still had time to try it again.  So I cleaned out the pan and started over again.  I watched it carefully and made sure I held it with both gloved hands when I took it from the oven.  But guess what?  It didn’t come out of the pan so smoothly.  There were huge chunks missing and there was no way it would stand up with the frosting.

So I ended up making a sheet cake and decorated it with the picture off the box.  It ended up okay but definitely NOT what I was hoping for.

The really cool cake pan still sits in my pantry with the fondant right next to it waiting for another special occasion.

Well, those are my stories about the best party I’ve thrown and my cake wreck.

If you are interested in entering the big birthday give-away, it ends Friday at 4 PM.  Click on the link below and see the other stories people have shared.

Swimming and Loving it! -- PSF-GMYBS

We had a wonderful time getting to spend a little bit of time in St George for a quick weekend get away.  Thank you to the Thomas’ for letting us stay in their place.

The girls were so thrilled that they had a pool and that it was warm enough to get to play.  The first day was a little too cold so we just hung out in the hot tub for a while.  But Saturday was warm enough that they stayed for quite some time in the sun and pool.  We forgot sunscreen.  Does that make me a bad mom?  Ivy had a cute little sunburn crisscross tan line and Jade had pink cheeks.

Some of my favorite pictures during the summer are in the pool.  It seems a little weird taking pictures playing in the pool when we’ve had snow on the ground ever since we returned.  But these four were my favorites.  They show the difference in my two little angels.  Dainty Ivy who will never put her head under water and Daring Jade who spent most of the time doing hand stands on the bottom of the pool.

Jade enjoyed sunbathing and would have stayed out in the sun until it went down.

Take a few minutes and check out the other photo story friday’s and give me your best shots.
