A Family Easter Tradition is my grandmother’s Pina Colada Cake. It is moist and delicious and very very easy to make. I didn’t take pictures of the process, but here’s the recipe…
Grandma’s Pina Colada Cake
Use yellow cake mix. Follow instructions and add ½ c shredded coconut. Bake per package instructions, but use a metal 9×13 pan (cupcakes are really messy and I won’t make them this way again).
When still hot from oven poke holes all over top of cake with fork. Then while still hot, pour one 16 oz can of Lopez Pina Colada mix (shake well) over cake. If puddles in corners, spoon over cake top. Let cool. Slather on cool whip and sprinkle coconut over cake top. Refrigerate to keep.
You could also use real whipped cream. Sometimes we’ll color the coconut green and top with jelly beans. Which definitely makes it look much more Easter-y.
